Single Serve Rice Krispies® Squares

Ingredients
- 15g or 1 tbsp butter or margarine
- 50 g (6-7 regular) or 3/4 cup mini marshmallows
- 1 ml or ¼ tsp vanilla
- 0.25 L or 1 cup Rice Krispies® cereal
Directions

Lightly grease a large (8oz or 240ml) ramekin with margarine or butter. Line with parchment paper for easy removal. Set aside.

Add the butter or margarine, and marshmallows in a microwave safe bowl. Microwave on HIGH for 30 seconds and stir, continue to microwave 10 seconds at a time until the marshmallows are fully melted.

Add the marshmallows to the bowl and toss to coat in the butter. Microwave on HIGH for 25 second intervals, stirring in between until melted and smooth.

Stir in the vanilla extract and add the Rice Krispies® cereal. Stir until well coated and empty the bowl into the prepared ramekin. Press into the pan using a lightly buttered spatula. Allow it to cool for 5 minutes before enjoying.

Tips
- For extra gooey treats add an extra 2-3 regular marshmallows.

Mess and Clean-Up
- You can line your baking pan with parchment paper or waxed paper to cut down on mess.
- Grease your spatula or spoon before combining the melted ingredients with the Rice Kripies® cereal.
- When pressing down the treats, to avoid sticky fingers. Try wetting your hands, using the butter stick wrapper or waxed paper.
Recipe Hacks
- For best results, use fresh marshmallows.
- 1 jar (7 oz.) marshmallow crème can be substituted for marshmallows.
- Diet, reduced calorie or tub margarine is not recommended.
- Store no more than two days at room temperature in airtight container.
- To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before serving.
