Rice Krispies® Protein Squares Recipe

Ingredients
- 100 ml or 1/2 cup margarine or butter
- 1.25 L or 5 cups miniature or 40 regular (250 g pkg) marshmallows
- 2 ml or 1/2 tsp vanilla extract (optional)
- 100 g (¾ cup) or 3 scoops of your favourite protein powder
- 4 1/2 cups Rice Krispies® cereal
Directions
- Lightly grease a 9x9” square pan. Line with parchment paper for easy removal. Set aside.
- Add the butter or margarine to a large microwave safe bowl. Microwave on HIGH for 30 seconds or until the butter is melted.
- Add the marshmallows to the bowl and toss to coat in the butter. Microwave on HIGH for 45 second intervals, stirring in between until melted and smooth.
- Stir in the vanilla extract and protein powder. Mix until smooth.
- Add the Rice Krispies® cereal and stir until well coated before emptying the bowl into the prepared pan and pressing the mixture into an even layer with a lightly butter spatula.
- Allow to cool for 5-10 minutes before removing the pan and slicing into squares.
Tips
- For extra gooey treats add an extra ½ cup of marshmallows.
- Flavoured protein powder such as birthday cake, or peanut butter chocolate can add a fun twist to this recipe.
Mess and Clean-Up
- You can line your baking pan with parchment paper or waxed paper to cut down on mess.
- Grease your spatula or spoon before combining the melted ingredients with the Rice Krispies® cereal.
- When pressing down the treats, to avoid sticky fingers. Try wetting your hands, using the butter stick wrapper or waxed paper.
Recipe Hacks
- For best results, use fresh marshmallows.
- 1 jar (7 oz.) marshmallow crème can be substituted for marshmallows.
- Diet, reduced calorie or tub margarine is not recommended.
- Store no more than two days at room temperature in airtight container.
- To freeze, place in layers separated by wax paper in airtight container. Freeze for up to 6 weeks. Let stand at room temperature for 15 minutes before serving.
